Many families has its own meat loaf recipe and the most of them begin with a soup mix. Though this family recipe, given to me some years ago by my grandmother, is made from scratch meat loaf. I'm not talking about the spongy, mystery meat loaf that maybe you have eaten at restaurants. No, I'm talking about all beef meat loaf with brown sugar topping and ketchup.

Class ingredients are what make this meat loaf so delicious. First of all, the recipe calls for only one kind of meat  “ground beef”. The bread crumbs are recent or fresh, it is not something from a can. The onion is fresh as well, though I have used dehydrated in a pinch. As for the topping, it makes every swallow of meat loaf extra delicious.

Prep Time: 20 Minutes Start to Finish: 1 Hour 40 Minutes Makes: 6 servings
1 cup fat-free (skim) milk
1½ lb extra-lean (at least 90%) ground beef
1 tablespoon Worcestershire sauce
1 teaspoon chopped fresh sage leaves or ¼
teaspoon dried sage
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon ground mustard
1 clove garlic, finely chopped or 1⁄8 teaspoon
garlic powder
1 egg
1 small onion, finely chopped (1⁄3 cup)
3 slices bread, torn into small pieces*
½ cup ketchup, chili sauce or barbecue sauce

1.     Heat oven to 350°F. In a large bowl, mix all ingredients except ketchup. Spread mixture in ungreased 8x4-inch or 9x5-inch loaf pan, or shape into a 9x5-inch loaf in ungreased 13x9-inch baking pan. Spread ketchup over top.

2. Insert ovenproof meat thermometer so tip is in center
of loaf. Bake uncovered 1 hour to 1 hour 15 minutes or
until beef is no longer pink in center and thermometer
reads 160°F; drain. Let stand 5 minutes; remove meat
loaf from pan.

*If you like, substitute ½ cup dry bread crumbs or ¾ cup quick-cooking oats for the 3 slices bread.

Mini Meat Loaves: Spray 12 regular-size muffin cups with cooking spray. Divide beef mixture evenly among cups (cups will be very full). Brush tops with about ¼ cup ketchup. Place muffin pan on cookie sheet to catch any spillover. Bake about 30 minutes or until loaves are no longer pink in center and thermometer reads 160°F when inserted in center of loaves in middle of the muffin pan (outer loaves will be done sooner). Immediately remove from cups.

Mexican Meat Loaf: Omit sage. Substitute 2⁄3 cup milk and 1⁄3 cup salsa for the 1 cup milk. Stir in ½ cup shredded Colby–Monterey Jack cheese blend (2 oz) and 1 can (4.5 oz) chopped green chiles, drained, in step 1. Substitute 2⁄3 cup salsa for the ketchup.

Horseradish Meat Loaf: Omit sage. Stir in 1 to 2 tablespoons cream-style prepared horseradish with ingredients in step 1.

Health Smart For 7 grams of fat and 240 calories per serving, substitute ground turkey breast for the ground beef and ¼ cup fat-free egg product for the egg. Use fat-free (skim) milk. Bake uncovered 1 hour to 1 hour 15 minutes or until turkey is no longer pink in center and thermometer reads at least 165°F.
