Sunday is mostly the day I can permit my pasta jones out and run rampant. And this past Sunday was no different. I had just purchased a couple of barillas angel hair pasta on the way residence from Sunday service, I was being lazy and did not want to make fresh angel hair pasta.


Angel Hair Pasta With Basil, Avocado, And Tomatoes

Prep Time: 20 Minutes Start to Finish: 20 Minutes Makes: 6 servings

2 tablespoons olive or vegetable oil
2 cloves garlic, finely chopped
8 oz uncooked angel hair (capellini) pasta
½ to ¾ large ripe avocado, pitted, peeled and
cut into small cubes
¾ cup chopped fresh basil leaves
4 medium tomatoes, cut into small cubes
½ teaspoon salt
¼ teaspoon pepper

1. Cook pasta as directed on the packet, omitting salt, and oil; drain.

2. Meanwhile, in 3-quart saucepan, heat oil medium heat. Cook garlic in oil about 5 minutes, stirring occasionally, until tender but not brown; erase from heat.

3. Stir basil, avocado and tomatoes into garlic in a saucepan. Toss vegetable mixture with pasta. Sprinkle with salt and pepper.

Angel Hair Pasta with Chicken: Stir 1 cup shredded cooked chicken into a mixture with the tomatoes in step 3. Cook just until heated.

Angel Hair Pasta with Shrimp: Stir ½ pound cooked medium shrimp into a mixture with the tomatoes in step 3. Cook just until heated.
